ELABORATION
Manual harvest of grapes from a vineyard located in the Valle del Zonda, San Juan; during the first days of the month of January of the year 2017.
Destemming. Vintage cooling. Pressed pneumatic separating the wort flower.
Static clarification by cold.
1 ° Fermentation with selected yeasts between 13º to 16°C. Mild clarification.
2 ° Produced from Pinot Grigio grapes using the "Champenoise" method
We keep in contact with the fine waste for 24 months (sur lies).
ORGANOLEPTIC ANALYSIS
Color:
Due to the lack of maceration and slow pressing, a faint yellow color is obtained.
Aroma:
It reveals delicious notes of white peach and pineapple.
OBSERVATIONS
It is recommended to drink it between 5°C to 7°C.
It is an easy-to-drink sparkling wine, ideal to be used as an aperitif.
