ELABORATION

Manual grape harvest from Chacayes. Destemmed. Vintage cooling. Pressed pneumatic separating the wort flower. Static clarification by cold.
1 ° Fermentation with selected yeasts between 13°C to 16 °C. Mild clarification.
2 ° Produced from Malbec grapes using the "Champenoise" method
Produced from Malbec grapes using the "Champenoise" method. We keep in contact with the fine sludge for at least 30 months (sur lies). The lees are removed during dégorgement.

ORGANOLEPTIC ANALYSIS

Color:

Intense red, with a persistent crown and a fine perlage.

Aroma:

An exotic bouquet on the nose, elegant bubbles, and red fruit flavors on the palate.

OBSERVATIONS

It is recommended to drink it between 5°C to 7°C.
To accompany all types of meals.
